Busy mealtimes? I know the story well. I grew up in a family of a working mom and a dad that owned his own business. I remember watching my mom trying to find easy and nutritious meals for our family. I still have some of the favorite magazine clips of her finds today. Fast forward to my own family. Being a teacher, and a very busy mom of three, I found that same drive to find quick and balanced meals. I always felt guilty if I caved-in and picked up fast foods or processed quick meals! I pushed myself to look for options for my family and ultimately for myself. Along my journey of motherhood, I found that my weight and my energy depended on eating better meals. I am now an empty nester. I feel it is just as important to find fast healthy meal options. I enjoy searching for lower calorie, lower carbohydrate, and keto recipes that would benefit myself and my fitness-driven husband. My research has given me a wealth of information and recipes to share. I think it is essential to include ingredients that help can reduce inflammation, improve energy, and maintain good gut health. This journey has brought me to this moment. I have developed a lifestyle that includes consistent healthy recipes that I would love to share with you.
